All right, whether you are getting ready to celebrate your first vegan Thanksgiving or just giving a Tofurky roast a shot at center stage for the first time, there are some important things to know about making this iconic vegan Thanksgiving dish.

1. Defrosting is actually important.

I have forgotten to thaw my Tofurky on more than one occasion, and let’s just say that thawing is necessary. Allowing the roast to thaw slowly overnight is the ideal method if you want a mouthwatering turkey substitute instead of a tasteless dried-out one. So, don’t forget to put that bad boy in the refrigerator the night before—go ahead and set yourself a reminder now.

2. Baste, baste, and baste again.

I cannot stress this enough. Your Tofurky will also dry out if you don’t baste it—A LOT. I usually brush more vegetable broth or olive oil over the top of it every 15 to 20 minutes just to be safe. The roast should cook for about one hour and 15 minutes, so that means a lot of basting.

3. Dress it up.

Chop up some of your favorite roasting veggies, like carrots, parsnips, and Brussels sprouts, and toss them in olive oil. Add some salt, cracked black pepper, and herbs and roast the veggies with your Tofurky for the final 45 minutes. This will make the presentation more enticing.

4. Avoid common mistakes.

Be sure to preheat the oven and set a timer once you’ve put in your roast. Carefully following the instructions on the package will also increase your chances of success. I mean, the folks at Tofurky probably know better than anyone how to make their yummy roasts.

5. Try a unique recipe.
