With the intensity and punch of the ginger, this latte is like the sassy version of the pumpkin spice latte. Plus, ginger has great digestive effects—and that’s what makes it the vegan post-meal drink you should be imbibing this holiday season.

If you’re going for more of a decadent almost-dessert than a rocket-fuel morning cuppa, make our coconut whipped cream and drizzle our three-ingredient vegan caramel on top. Curl up with this latte, a good book and a cat by the fireplace, and celebrate the end of summer in style.

Copycat Vegan Starbucks Gingerbread Latte

Ingredients

Gingerbread Spice

  • 1/4 teaspoon cinnamon
     
  • 1/8 teaspoon ground ginger
     
  • 1/4 teaspoon ground nutmeg

Latte

  • ½ cup freshly-brewed espresso (preferred) or very strong coffee
     
  • 1 tablespoon coconut sugar
     
  • ½ cup to 1 cup  oat milk (or any plant milk of your choice)

Preparation

  1. 1

    Mix spices into a bowl to create gingerbread spice. Add hot coffee and sugar into the mixture. Taste and adjust flavor (add more spice or sugar if needed).

    Add blended or frothed non-dairy milk to a cup. Pour gingerbread spice and coffee mixture into milk.

  3. 3

    Add whipped coconut cream if desired and a sprinkle of gingerbread spice topped off with vegan caramel.

Ingredients

  • 1 can full-fat coconut milk or coconut cream 
     
  • ½ cup powdered sugar 
     
  • 1 teaspoon vanilla extract (optional)

Preparation

    Chill your coconut cream or milk in the refrigerator and leave it there overnight.

  2. 2

    Remove coconut cream or milk from the fridge and open carefully. You’ll see that the cream part has separated from the water and risen to the top.

    Scrape out the top part and add to the mixing bowl, leaving the water behind (you can save the water to use for other cooking projects).

    Start beating the cream at a slow speed, gradually increasing speed until you achieve a whipped cream consistency.

    Once you have a whipped cream consistency, add powdered sugar and vanilla for a sweetened cream. Whisk again until mixed in.

Three-Ingredient Vegan Caramel

  • 1/4 cup coconut oil
     
  • 1/4 cup agave or maple syrup
     
  • 2 tablespoons almond butter

Preparation

  1. 1

    Add all ingredients into a glass container.

    Microwave for 30 seconds.

    Whisk until all ingredients are fully incorporated and very smooth.
