A new Black-owned vegan ice cream shop opens in Baltimore, serving up globally inspired flavors. After selling their scratch-made ice cream at markets and restaurants for the past six years, husband-and-wife duo Nicole Foster and Dwight Campbell opened their first storefront—Cajou Creamery—on August 28, offering unique and tasty flavors like Guava & Cheese Pastelito, Lemon Stick, and Spiked Milk & Cookies.

“This all began because our children were lactose intolerant,” Foster told VegOut. “They loved ice cream but got sick from it. As their parents, we wanted to give them that joy only ice cream can give, so Dwight and I combined our culinary knowledge to make something new.”

Handmade from Scratch with Whole, Plant-Based Ingredients

Foster is a certified raw vegan chef and has spent the past twenty years in law and public health, tackling criminal justice, food equity, health, and housing. While Foster has experience on the social justice end of the food scene, Campbell has more than fifteen years of culinary experience, having cheffed in some of South Florida’s hottest upscale restaurants and at the National Gallery of Art in Washington, D.C.

Campbell and Foster founded Cajou Creamery in 2018 as an experiment, which quickly turned into a growing business. Today, Cajou Creamery pints are sold in more than forty stores throughout Maryland and D.C., and every $12 pint is still handmade from scratch with whole, plant-based ingredients. In addition to selling at local retailers, Cajou Creamery also ships all of their pints nationwide.

Cajou Creamery’s 100% Plant-Based Ice Cream

Cajou Creamery offers 100% plant-based ice cream made with simple ingredients like coconut milk, raw cashews, and dates. The menu features seven ice cream varieties that represent Foster and Campbell’s passion for travel and international cuisine, including Baklava, Horchata, Kulfi (an Indian dessert made with coconut milk and cardamom), Cortadito, Mexican Cacao, Blueberry Cheesecake, and Sweet Potato Pie, all of which are free from dairy, gluten, soy, and artificial flavors.
