  1. Activate yeast with water, butter, salt, and sugar.
  2. After, add in the flour, working the mix into dough.
  3. Place dough in a bowl, cover, and allow it to rise.
  4. Preheat the oven and line a baking dish.

Baking Soda Water

It’s very important to do the baking soda water dip. Before dipping the dough, make sure the water is cooled a bit and the baking soda is dissolved. Then leave the dough in for 2 minutes.

Seasoning Pretzels

After you remove your pretzels from the water, they will be wet. That is the time to add seasoning or salt to your pretzels. The water will help the seasonings stick to the pretzels; otherwise, the seasoning will just fall off the dough.

Stand Mixer

You might want to use a stand mixer with a dough hook. This works great for mixing up the dough and giving it the perfect texture and consistency.

Variations to Vegan Soft Pretzels

Instead of everything-but-the-bagel seasoning, you can use a pretzel salt. This will give your pretzels more of a classic flavor. You could then eat your pretzels plain or dip them in a vegan cheese sauce.

Air Fry

Instead of baking your pretzels in the oven, you could air fry them instead. You’ll just need to watch them to make sure they do not overcook, as all air fryers heat slightly different.

The baking soda water is going to create that golden, chewy outside pretzel texture that you know and love. Without the baking soda water, your pretzels would have more of a classic roll or bread-like texture.

How do you know when yeast is activated?

Yeast is activated when the yeast—after being mixed with water and sugar and let to sit for a few minutes—begins to bubble up and foam. The foamy bubbles mean that your yeast mixture is active and working. If your mixture is not foaming, the yeast is dead and you need to try again.

How should you store soft pretzels?

You can store soft pretzels at room temperature in an airtight bag or container. Just make sure that they are fully cooled before you store them, or they will create condensation in the container and spoil faster.

Can you freeze soft pretzels?

You can totally freeze soft pretzels. Just place them in a freezer-safe bag or container and freeze them for 2–3 months. Then when you want to eat one, use the defrost feature on your microwave or thaw the pretzels on the counter for around an hour.

  • 2 ¼ tsp active dry yeast
  • 1 cup warm water between 90–110°F
  • 1 tbsp vegan Butter melted
  • 1 tsp organic white sugar
  • 1 tsp salt
  • 3 cups all-purpose flour approximately
  • 3 cups water
  • 4 tbsp baking soda
  • 2 tbsp everything-but-the-bagel seasoning


  • In a large bowl, combine yeast, warm water, melted vegan butter, sugar, and salt. Stir and let the yeast activate for about 10 minutes.

  • Stir in the flour as needed to form a cohesive dough. It should require approximately 3 cups, but the amount can vary a bit based on your specific flour brand.

  • Fold the dough out onto a clean surface and knead for 5 minutes.

  • Place dough back into a clean bowl and cover with a clean kitchen towel. Set in a warm spot of your kitchen and allow the pretzel dough to rise until it roughly doubles in size, about 30 minutes.

  • Preheat oven to 475°F. Line a baking sheet with parchment paper.

  • Boil 3 cups of water and dissolve the baking soda in it. Remove from heat and allow to cool until just warm.

  • Divide the pretzel dough into 8 equal pieces, then shape into pretzel shapes.

  • To shape dough into pretzels, roll each segment into 1″ thick ropes. Form the rope into a U-shape, then take both ends and twist twice at the top.

  • Invert the twisted edges to the bottom of the U-shape and press dough together to secure.

  • Quickly dunk the shaped pretzels into the warm baking soda water for 2 minutes, then move them to a lined baking sheet.

  • Sprinkle the pretzels with EBTB seasoning.

  • Bake pretzels for 8–10 minutes or until golden brown.
